Basil Lovers’ Green Beans

 

Enjoy fresh green beans with a delicious basil flavor—the essence of what summer should taste like.

 

Ingredients:

 

Makes about 6 1-cup servings

1 pound fresh green beans

1 small zucchini or other summer squash

1 cup fresh basil leaves

1/2 teaspoon salt

1 medium garlic clove

1 tablespoon olive oil

 

Directions:

 

Trim ends from beans.  Break beans into 1-inch pieces.  Steam over boiling water for 7 to 10 minutes, or until tender when pierced with a fork.

 

While beans are cooking, cut zucchini into chunks.  Place in a food processor along with basil, salt, garlic, and olive oil.  Process until smooth.

 

Transfer beans to a serving dish and toss with the basil mixture.
